Salata Falahiyeh (Palestinian Farmer’s Salad)

Ingredients:

  • 1½ pounds ripe tomatoes, diced
  • 2 Persian cucumbers, diced
  • 1 small yellow onion or 4 scallions, diced
  • 1 fresh green chile (such as jalapeño or Anaheim), seeded and finely diced (optional)
  • 3 tablespoons fresh mint, finely chopped (or 2 teaspoons dried mint)
  • ½ preserved lemon (or ½ fresh lemon, including rind, pith, and flesh), finely minced
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • Salt, to taste

Directions:

  1. Combine the tomatoes, cucumbers, onion (or scallions), chile (if using), mint, and preserved lemon in a large bowl.
  2. Add the lemon juice and season with salt. Toss well and let sit for a few minutes so the flavors meld.
  3. Drizzle with the olive oil and toss again.
  4. Taste and adjust salt or lemon juice as needed. Serve immediately.
