Cucumber & Melon Salad with Black Pepper & Mint

Makes: 4-6 servings

Recipe from the Vegetable Literacy Cookbook

INGREDIENTS:

  • 1 ripe honeydew or cantaloupe
  • 1 regular sized cucumber
  • 1+ tbsp chopped mint
  • Grated zest of 1 lemon
  • 2 tsp lemon juice
  • Sea salt & ½ tsp fresh ground pepper
  • 2 tbsp olive or avocado oil
  • Mint springs to garnish 

DIRECTIONS:

1. Halve & seed the melon, the slice into sections. Cut the flesh away from the skin and then cut into bite sized chunks. Chop cucumbers without peeling them. Put the melon & cucumber in a salad bowl. 

2. Stir together the mint, lemon zest and juice, pepper and ¼ tsp salt in a small bowl. Then whisk in the oil. Taste and adjust the seasoning if necessary.

3. Toss the melon & cucumber with the dressing. Chill for 1 hour or longer. Grind pepper over top & finish with mint sprigs.
