
Recipe from Just Roots’ CSA Kitchen series
Ingredients:
- 1 cup frozen mango or 2 frozen bananas
- 1 small beet, boiled until soft and peeled (use as little as you’d like to start, see tips below)
- 3 Tbsp cocoa powder
- 1½ cup milk of choice
- 3 pitted dates, or maple syrup or honey to taste
Directions: Blend ingredients together.
You can also make popsicles out of this smoothie!
Tips for using beets in smoothies:
- Start small. Use ¼ beet and work your way up.
- Pair with chocolate: chocolate + beets = decadence
- Pair with yummy fruit berries: the acid in strawberries and raspberries covers up the earthiness of the beets!
