Ingredients:
- 1 bunch scallions (trimmed)
- 1 habanero chile, seeds removed (sub whatever hot pepper you have on hand)
- 4 garlic cloves
- 2 limes (zest and 1/2 cup fresh juice)
- 1 small head Napa cabbage (sub green cabbage)
- 2 watermelon radishes (or any radish you have on hand)
- Mint and thinly sliced red onion
- 1/4 cup vegetable oil
- Kosher salt
Directions:
- Char the Scallions: Grill or char the scallions until they develop a toasty depth.
- Make the Dressing: Blend the charred scallions, habanero chile, garlic cloves, fresh lime juice, lime zest, vegetable oil, and salt together into a spicy, bright dressing.
- Prep the Slaw: Thinly slice the Napa cabbage and watermelon radishes. Toss them with fresh mint and red onion.
- Toss and Serve: Pour the spicy lime dressing over the cabbage mixture and toss well to combine
