This fresh and flavorful chopped salad is made with crunchy veggies that are tossed in a creamy, gingery peanut dressing.
Ingredients:
For the Salad:
- 4 cups shredded cabbage
- 1 bell pepper, diced or sliced thin
- 1 cup shredded carrot
- ½ cup minced scallions
- ½ cup minced cilantro
- ½ cup minced peanuts
For the Dressing:
- 3 Tbsp peanut butter
- 2 Tbsp soy sauce
- 2 Tbsp lime juice
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 tsp salt
- 1 tsp chili paste (optional)
- 1 clove garlic
- warm water to thin if needed
Directions:
- Mix the dressing ingredients together in a blender or food processor.
- Combine with the salad ingredients.
VQ note: This is amazing with leftover rotisserie chicken added in!
