Posted on: June 24, 2026

Recipe adapted from Liz Della Croce
Time: 15 minutes Servings: 8

This fresh and flavorful chopped salad is made with crunchy veggies that are tossed in a creamy, gingery peanut dressing.

Ingredients:

For the Salad:

  • 4 cups shredded cabbage
  • 1 bell pepper, diced or sliced thin
  • 1 cup shredded carrot
  • ½ cup minced scallions
  • ½ cup minced cilantro
  • ½ cup minced peanuts

For the Dressing:

  • 3 Tbsp peanut butter
  • 2 Tbsp soy sauce
  • 2 Tbsp lime juice
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp salt
  • 1 tsp chili paste (optional)
  • 1 clove garlic
  • warm water to thin if needed

Directions:

  1. Mix the dressing ingredients together in a blender or food processor.
  2. Combine with the salad ingredients.

VQ note: This is amazing with leftover rotisserie chicken added in!
