Carrots get a huge make over with the addition of Panko breadcrumbs for added crunch. It’s so unbelievably easy to throw a handful of simple ingredients together — olive oil, garlic, parmesan cheese and breadcrumbs. Sprinkle over some parsley and have Parmesan roasted carrots on your table in no time.
Ingredients:
2 pounds carrots, washed and halved
¼ cup olive oil
4 large cloves garlic, minced
¼ cup grated parmesan cheese
2 tablespoons bread crumbs (if you want to make it Gluten-Free skip this step or use Gluten-Free bread crumbs)
Salt & Pepper to taste
Olive oil for baking sheet
Optional: Fresh parsley, chopped
Directions:
1. Preheat oven to 400° F. Wipe a baking sheet down with a little olive oil to make sure the carrots don’t stick to the sheet.
2. Arrange carrots on sheet. Drizzle with the olive oil, then add garlic, parmesan, bread crumbs, salt and pepper. Toss all ingredients together to completely coat carrots. Spread out and bake for 20-25 minutes, or until tender. Toss with a spatula half way through baking.
3. Remove from oven and serve immediately. Top with fresh parsley if desired. Enjoy!
