Escarole is a slightly bitter green which can be eaten raw or cooked. Feel free to try adding turkey bacon or a meat substitute to this dish if you like! If adding turkey bacon, cook bacon strips in the pan then remove them but save 2 tsp of the drippings. The rest of the dish can be cooked in the pan with the turkey bacon drippings for a savory meal.
Ingredients:
- 2 slices of turkey bacon cooked and cut into pieces (optional)
- 1 cup chopped onion
- 1 garlic clove, thinly sliced
- 6 cups chopped escarole
- 2 tsp olive oil
- ½ tsp sugar
- ¼ tsp salt
- ¼ tsp black pepper
- 1-14 oz carton of reduced sodium vegetable broth
- 1-16 oz can of white beans, rinsed
Directions:
- If omitting turkey bacon, warm 2 tsp of olive oil in a large frying pan. Then add onions can cook until golden brown about 10 minutes. Then add garlic and cook for an additional 2 minutes. Then add escarole and cook for another 2 minutes stirring frequently
- Add sugar, salt, pepper, and broth to the pan and stir until combined. Cook for about 15 minutes until escarole is tender stirring frequently.
- Once escarole is tender and the rinsed white beans and cook for another 2 minutes or until beans are heated through.
- If you omitted the turkey bacon feel free to top this dish with some veggies of your choice or a sprinkle of cheese. If you cooked turkey bacon top the sauté with the bacon pieces. Enjoy!
