Escarole and White Bean Saute

 Escarole is a slightly bitter green which can be eaten raw or cooked. Feel free to try adding turkey bacon or a meat substitute to this dish if you like! If adding turkey bacon, cook bacon strips in the pan then remove them but save 2 tsp of the drippings. The rest of the dish can be cooked in the pan with the turkey bacon drippings for a savory meal.

Ingredients:

  • 2 slices of turkey bacon cooked and cut into pieces (optional)
  • 1 cup chopped onion
  • 1 garlic clove, thinly sliced
  • 6 cups chopped escarole
  • 2 tsp olive oil
  • ½ tsp sugar
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1-14 oz carton of reduced sodium vegetable broth
  • 1-16 oz can of white beans, rinsed

Directions:

  1. If omitting turkey bacon, warm 2 tsp of olive oil in a large frying pan. Then add onions can cook until golden brown about 10 minutes. Then add garlic and cook for an additional 2 minutes. Then add escarole and cook for another 2 minutes stirring frequently
  2. Add sugar, salt, pepper, and broth to the pan and stir until combined. Cook for about 15 minutes until escarole is tender stirring frequently.
  3. Once escarole is tender and the rinsed white beans and cook for another 2 minutes or until beans are heated through.
  4. If you omitted the turkey bacon feel free to top this dish with some veggies of your choice or a sprinkle of cheese. If you cooked turkey bacon top the sauté with the bacon pieces. Enjoy!
