Ingredients:
- 3 cups chopped kale
- 3/4 cup olive oil (divided)
- salt/pepper (to taste)
- 1 cup fresh basil leaves
- 3 teaspoon minced garlic
- 1/2 cup pine nuts (or crushed walnuts) or try sunflower seeds, pumpkin seeds, or mashed avocado for a nut free option
- 1/3 cup grated parmesan (or mozzarella) omit if dairy free or vegan
- 1/2 medium lemon, juiced
Directions:
- Toss the kale with 1/4 cup of olive oil, salt, and pepper. Set aside and marinate for 20 minutes.
- In a food processor, pulse blend the pine nuts, basil, and garlic.
- Add in the marinated kale, remaining olive oil, lemon juice, and parmesan.
- Lightly pulse to create pesto.
- Add more salt and pepper if desired (to taste) and enjoy!
