Easy Kale Pesto

Recipe From: Christine, Jar of Lemons

Ingredients:

  • 3 cups chopped kale
  • 3/4 cup olive oil (divided)
  • salt/pepper (to taste)
  • 1 cup fresh basil leaves
  • 3 teaspoon minced garlic
  • 1/2 cup pine nuts (or crushed walnuts) or try sunflower seeds, pumpkin seeds, or mashed avocado for a nut free option
  • 1/3 cup grated parmesan (or mozzarella) omit if dairy free or vegan
  • 1/2 medium lemon, juiced

Directions:

  • Toss the kale with 1/4 cup of olive oil, salt, and pepper. Set aside and marinate for 20 minutes.
  • In a food processor, pulse blend the pine nuts, basil, and garlic.
  • Add in the marinated kale, remaining olive oil, lemon juice, and parmesan.
  • Lightly pulse to create pesto.
  • Add more salt and pepper if desired (to taste) and enjoy!
