No sweating over a hot stove for this recipe! This no-cook Zucchini Caprese Salad is light and full of delicious summer flavors.
Ingredients:
- 4 cups halved cherry tomatoes
- 3 garlic cloves
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup light balsamic vinaigrette (see below)
- 4 medium zucchinis
- 1/2 cup lightly packed basil, shredded
- 4 oz fresh mozzarella (optional)
Balsamic Vinaigrette:
- 3/4 cup olive oil
- 1/4 cup balsamic vinegar
- Salt and pepper
- Optional Extras: spoonful of mustard, minched shallots/onions, minced or dried herbs, or honey
Directions:
1. Place all balsamic dressing ingredients into a jar and shake.
2. Either spiralize the zucchinis or slice the zucchinis in half the long way and using a
peeler, create thin slices. Set aside.
3. In a large bowl combine halved cherry tomatoes, garlic, salt, pepper, and balsamic
vinaigrette.
4. Add in zucchini and mozzarella (if you’re using it). Toss to combine. Set aside for 10 minutes in order for flavors to combine. Before serving top with shredded basil. Enjoy!
