A quick and easy recipe, you can use this salad to top a bed of leafy greens or just enjoy it as is! This salad could also make a good filling addition to tacos or burritos.
Ingredients:
- 3 medium turnips, peeled, and shredded
- 3 medium carrots, peeled, and shredded
- ½ cup chopped parsley
- 1 cup raw pumpkin seeds
- juice of ½ of lemon
- 2 TBSP olive oil
- Sea salt to taste
Directions:
- Place the turnips, carrots, parsley, and pumpkin seeds in a large bowl and toss to combine
- Add lemon juice and olive oil and mix well. Add salt to taste if you wish
- That’s it! Enjoy this quick and easy salad!
