One of my all-time favorite dishes is a classic, creamy potato salad. The great thing about potato salad is you can easily add in more vegetables into the dish to bring more flavor and color to your meal! Adding in shredded beets, carrots, fennel, or celery to your potato salad is an easy and sneaky way to get more veggies into your diet!
Ingredients:
- 1 ½ to 2 lbs potatoes (about 5 medium sized)
- 3 hard-boiled eggs
- ½ medium onion, finely chopped
- 1/4 cup mayonnaise
- 1/4 yogurt
- 1.5 tbsp white vinegar
- 1 tbsp mustard
- ½ tsp salt
- ¼ tsp pepper
- Paprika
Optional Add-ins: shredded beets, carrots, fennel, celery, a few tablespoons of any fresh herb
Directions:
1. In a large pot cook potatoes in boiling salted water until tender. Drain and cool. Peel potatoes; cut into chunks. Separate hardboiled egg yolks from whites. Set yolks aside. Chop whites and add to potatoes with chopped onion.
2. In small bowl mash yolks. Stir in mayonnaise, yogurt, vinegar, mustard, salt & pepper. Pour over potatoes and any of your chosen optional ingredients; toss well. Adjust seasonings if necessary. Spoon into a serving bowl. Garnish with paprika. Chill until serving. Enjoy!
