Growing up in Hadley a lot of my friends were Polish and would come to school with delicious looking Polish lunches that their parents had made for them. I remember one of my friends once describing this meal as a potato salad made with leeks instead of potatoes. It’s delicious and easy to make on a weeknight!
Ingredients:
- 3-4 Leeks
- 3-4 hard boiled eggs
- 1 cup corn or peas
- 1 cup grated cheese
- 6 tbsp mayonnaise, sour cream or plain yogurt (or any combo)
- salt and pepper to taste
Directions:
1. Cut the white part of the leeks into thin slices. Place in a bowl and add boiling water to the leeks with just enough water to cover them. Leave for only 5 minutes then drain. 2. Peel and dice the hardboiled eggs and place them in a medium sized bowl. Add in the peas or corn. Add in the cook leeks and grated cheese.
3. In a small bowl mix the mayo/sour cream/yogurt with salt and pepper to taste.
4. Add the sauce to the salad and mix until combined. Serve as a side or a main dish! Enjoy!
Note: this is a higher sodium dish and should be avoided if concerned about sodium levels.
