This salad is dressed up with zesty lime and would also make a great addition to tacos for picky eaters trying to sneak in more greens! There are several mix ins you can add to this salad as well so feel free to get creative and colorful with your plate!
Ingredients:
- 6 cups fresh kale
- 1 ½ TBSP sesame oil
- ¼ tsp coarse salt
- 1 ½ cup red cabbage
- 1 tsp honey
- Juice of 1 lime (about 2 TBSP of lime juice)
Directions:
- Wash kale and dry thoroughly, remove the stem and finely chop the leaves to yield 6 lightly packed cups. Transfer to a large mixing bowl.
- Add the sesame oil and salt, with clean hands start to mix and squeeze the kale gently massaging it and working it between your fingers. Continue for 3-4 minutes or until kale is reduced to about half its original volume and becomes a deeper green color.
- Add the lime juice and honey and massage once again until well combined. Wash hands and add cabbage and any desired mix ins. Some great mix in options could be edamame, slivered almonds, or green onions. Serve immediately or chill in fridge 30-60 minutes and enjoy!
