Greek Salad

This traditional Greek Salad is one of my personal favorites. It encompasses all the great flavors of summer into one refreshing dish. It’s great by itself or serve as a side dish with fish! 

Ingredients:

  • 4 medium tomatoes
  • 1 cucumber, peeled
  • 1 green bell pepper
  • 1 medium onion
  • Greek pitted Kalamata olives
  • salt, just a pinch
  • 4 tbsp olive oil
  • 1-2 tsp red wine vinegar
  • 8oz or more feta cheese
  • 1/2 tbsp dried oregano 

Directions:

1. Cut tomatoes into large chunks. Cut peeled cucumber in half length-wise, then slice into thick halves. Thinly slice bell pepper into rings. Cut onion in half and thinly slice into half moons. 

2. Place everything into a large serving bowl and top with a handful of olives. Season with olive oil, red wine vinegar, and a pinch of salt. Give salad a gentle toss to mix. Add in feta cheese and sprinkle with oregano. Goes great with a slice of good bread!
