Fresh Vegetable Spring Rolls

      Prep time: 20 min  Serves: 4-6  

Do you want your kids to eat more veggies, but they just don’t love salad?  This two-bite finger food is irresistible dipped in a savory tahini dressing.  Enjoy the freshness of Spring, to everyone’s health! (Note, these don’t store well, so make what you are going to eat.)

Ingredients:

  • 1 package of Spring Roll Wrappers
  • 1-2 heads lettuce, sliced thin
  • 1/2 cup radish, grated or sliced into matchsticks
  • 1/2 cup beet, grated or sliced into matchsticks
  • 1/2 – 1 cup carrot, grated or sliced into matchsticks
  • 1/2 bunch green onion, sliced thin
  • 2 TB diced cilantro, parsley, basil (or all of them!)

Directions:

1. Slice or grate all vegetables.  Toss together in a bowl.

2. Slide spring roll wrappers, one at a time, into a wide bowl so the wrapper is covered completely with water.  Let sit in the water for 9 seconds.  Take it out!

3. Place ~2TB of veggie mixture onto the wrapper, and roll it up like a burrito.

4. Set them on a plate to serve, with tahini dressing or sweet chili sauce and enjoy!

Tahini Salad Dressing 
(makes about 2 cups, VEGAN)         

This dressing is great on the spring rolls above, on any type or salad, or on sandwiches, fish, veggie burgers, or meat. 

Ingredients:

  • ½ cup tahini (sesame paste), or sunflower seed butter
  • ½ cup olive oil (or other good veg oil)
  • ½ cup water
  • ¼ cup tamari (dark soy sauce)
  • 3 TB red white vinegar
  • 2 TB lemon juice
  • 2 tsp fresh ginger root, minced
  • 2 cloves garlic, pressed
  • pinches salt + pepper, to taste

Directions:           

1.  Put everything is a glass jar w/ a lid.  Shake!  Let sit 5-15 minutes for flavors to mix.
2.  Enjoy!  Stores well in the fridge for about a week… if it lasts that long. 😉
