Cool down on a hot summer day with this refreshing cucumber salad. This is a wonderful, summer, no-cook, recipe that can be used as a side for lunch, dinner, or have it as a snack!
Ingredients:
- 1/2 cup sour cream or plain yogurt
- 2 tbsp fresh dill (chopped)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp garlic powder or fresh garlic (chopped)
- 1/2 tsp sea salt
- 1/4 ground black pepper
- 6 cups cucumber (chopped)
- 1 small red onion (thinly sliced)
Directions:
1. In a large bowl, whisk together sour cream (or yogurt), dill, olive oil, lemon juice, and garlic. Season with salt and pepper to taste.
2. Stir in chopped cucumbers and red onion. Serve and enjoy!
