A creamy mash with a subtle taste of celery. Ideal to serve with continental sausages or your favorite casserole – the mash will soak up the delicious juices. Celeriac is a knobbly-skinned root vegetable with a light celery flavor. It is easier to peel with a small sharp knife rather than a potato peeler.
Ingredients:
- 2 small celeriac, peeled, diced
- 3 small potatoes–yukon is good, russet, peeled and diced
- 2 garlic cloves, peeled
- ½ cup heavy whipping cream
- 3 Tablespoons butter, chopped
Directions:
- Place celeriac, potatoes and garlic in a saucepan of boiling, salted water over medium-high heat.
- Cook for 10-12 minutes or until tender. Drain in a colander.
- Return vegetables to warm saucepan. Shake saucepan over low heat for 30 seconds or until excess moisture evaporates. Remove from heat.
- Using a potato masher, roughly mash vegetables. Stir in cream and butter. Mash until smooth and creamy. Season with salt and pepper. Serve.
