Ingredients:
- Three cups thinly sliced cabbage
- 1 apple, julienned
- 2 carrots, shredded
- 2 sliced green onions or 1/8th cup minced onion
- 2 tsp chopped fresh herbs (parsley, dill or cilantro)
- 2 tbsp olive oil
- 2 tbsp honey
- 2 tbsp vinegar (like apple cider)
- 1 tbsp lime or lemon juice
- Salt & pepper to taste
Directions:
- Shred three cups of cabbage into fine strips and add to a large mixing bowl.
- Grate the carrots using a big holed grater and add it to the bowl along with sliced green onions or minced onion.
- Finely chop a small handful of fresh herbs and add it to the slaw mix.
- Cut the apple into thin match-stick pieces and add it to the salad. If you’re chopping up this salad ahead of time, don’t cut the apple till you’re ready to dress the salad.
- Toss everything together
- For the dressing use 2 tablespoons of salad oil in a jar or a bowl.
- Add the honey, vinegar, citrus juice, salt, and pepper.
- Put the lid on and shake the dressing (if you’re using a bowl simply whisk it with a fork) until the oil and other liquids are mixed well.
- Drizzle over the salad and toss well until everything is coated in the dressing.
- Serve chilled.
