Vegetable fritters can be so bland and uninspiring … but not in the hands of Indian cooks! Pakoras are a traditional Indian street food made with all sorts of vegetables. We’ve used onion, carrot, potato and broccoli, but feel free to experiment!
Ingredients:
- 3-4 cups frying oil
- 2 1/4 cups chickpea flour
- ¾ cups + 2 ½ tbsp water
- 1 tbsp finely minced ginger
- 2 cups grated potatoes
- 1 ½ cups grated onion
- 2 ½ cups broccoli finely chopped
- 2 tbsp cilantro finely chopped
- 3 medium carrots
- 1 tsp coriander powder
- 2 tsp salt
- 1/4-1/2 tsp chili flakes
- 2 tsp garam masala or cumin
- 1 tsp turmeric (optional)
- Prepare Vegetables:
Ginger (mince 1 tbsp) | Broccoli (chop 2.5 cups) | Potato (grate 2 cups) | Onion (grate 1 ½ cups) | Carrot (grate 1 cup) | Cilantro (chop 2 tbsp) |
- Make batter: Place 2 ¼ cups chickpea flour in a bowl with spices & salt (1 tsp Coriander Powder, 2 tsp Salt, ¼-½ tsp Chili Flakes, 2 tsp Garam Masala or Cumin). Slowly whisk in ¾ cups + 2 ½ tbsp water.
- Mix in Vegetables: Add potato, broccoli, onion, ginger, carrot and cilantro. Mix well with a wooden spoon. It should be a thick batter, almost paste-like.
- Preheat the oven to 175°F – to keep cooked pakoras warm. Set a rack over a tray.
- Heat oil: Heat 3-4 cups oil (1.5″) in a large heavy based pot to 350°F
- Form patties: Drop 2 tbsp of batter roughly formed into patty shape in the oil (be careful of splashing). Don’t crowd the pot, it will lower the temperature too much.
Fry pakoras: Fry 2 – 3 minutes until golden. Drain on paper towels. Keep cooked pakoras hot in the oven on a rack set over a tray.
Apple Chutney
Ingredients
- Apples (2 small/medium)
- ¼ cup Red wine vinegar or other vinegar
- ¼ cup honey, maple syrup, or agave
- ½ medium or 1 small Yellow onion
- 2 cloves minced Garlic
- ½ knob minced Ginger
- 1 Lemon (zested + juiced)
- ½ tsp Chili Flakes
- ⅛ tsp Coriander Powder
- salt & pepper to taste
Directions
- Peel and chop the onion, ginger and garlic.
- Peel, core, and chop the apples
- Add the apples, red wine vinegar, honey, onion, ginger, and garlic in a heavy bottomed pan and place the pan over low heat and let simmer for 15 minutes. While cooking, make sure to stir often.
- Zest the lemon and add the zest into the pan with the apples, etc.
- Cut the zested lemon in half and squeeze the juice into the pan.
- Add ⅛ teaspoon of coriander powder to the mixture
- When the mixture has been simmering for 15 minutes and it is starting to thicken, remove it from the heat.
- Add in the chili flakes and season with salt and pepper to fit your taste.
