Some veggie burger recipes are time consuming, have long ingredient lists, and for some people they can be full of allergens like soy and wheat. This recipe has none of these traits! This is a quick, simple way to make tasty, crispy-on-the-outside, soft-on-the-inside veggie burgers out of a short list of healthy ingredients. I’ve provided substitution options on the ingredients list for those who are vegan, soy-free, and gluten-free. Squeezing out the excess liquid with cheesecloth is essential, so long as you don’t mind your cloth remaining pink afterwards. Enjoy!
Ingredients
- 2 TBSP ground flaxseed or 1 egg
- 1 ½ cups canned black beans, drained and rinsed
- ½ medium onion, finely chopped
- 2 cloves garlic, minced
- 1 small beet, grated
- ½ cup sweet corn, frozen or fresh
- 2 tsp fresh thyme or 1 tsp dried thyme
- 1 tsp smoked paprika
- 2 tsp dried mixed herbs of your choice (onion powder, garlic powder, oregano, etc)
- ½ cup all purpose flour or brown rice flour
- 2 TBSP soy sauce or tamari or coconut aminos
- Salt and pepper to taste
- Avocado, grapeseed or canola oil for frying
To Serve
- 4 buns
- Lettuce leaves
- Tomato slices
- Condiments of choice (mayo, ketchup, mustard, etc)
1. If using ground flaxseed for your egg substitute – In a small bowl, mix the ground flaxseed with 2 tablespoons of water. Stir to combine and set aside to thicken for 10 minutes.
2. In a large bowl, mash the black beans by hand until they are broken down. Mix with the grated beet, onion, garlic, and sweet corn. Using a cheesecloth, squeeze as much excess liquid out of the mixture as you can.
3. Add the flaxseed or egg, thyme, smoked paprika, other mixed herbs, flour, and soy/tamari/coconut aminos to the bowl, and mix with your hands to combine. Check the taste and season with salt and pepper if needed (I found I needed to add quite a bit of salt, even with the tamari).
4. Divide the mixture into 4 balls, and shape these into burger patties.
5. Heat a generous amount of oil in a large frying pan on a medium heat. Cook the burgers for 4-5 minutes on each side until browned.
6. Serve immediately on your favorite burger buns with mayo, lettuce leaves, tomato slices, or any of your favorite burger toppings. Enjoy!
