Everyone loves potato slices! This baked version is a great side dish and would pair well with some steamed or sautéed cooking greens or a nice big fall salad! Feel free to add any additional spices you want, garlic powder, chili powder, cayenne powder, or additional herbs would all be good additions! You could also serve with salsa and scrambled eggs for a hearty breakfast meal.
Ingredients:
- 4 medium potatoes, sliced into ¼ in slices
- 2 TBSP olive oil
- 2 tsp thyme
- ½ tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- ¼ cup of fresh parsley (or more), chopped for garnishing
Directions:
- Preheat oven to 400 and place oven rack in the middle of your oven. Wash, peel, and cut potatoes into ¼ inch slices.
- In a large bowl combine olive oil, thyme, salt, pepper, and paprika and mix well. Toss the potato slices in the oil and spice mixture until coated evenly.
- Line 2 baking sheets with foil and arrange potato slices in a single layer. Bake at 400 degrees for about 30 minutes.
- Garnish with fresh chopped parsley and/or a sprinkle of cheese and enjoy!
