Ingredients:
- 2 packages chicken wings
- 2 lemons
- 2 tbsp olive oil
- 4 cloves garlic – peeled
- 3 teaspoons salt
- 1 teaspoon pepper
Directions:
- Heat oven to 400 degrees. Line a baking sheet with foil and place wire rack on top. Set aside.
- Zest and juice one lemon into a large bowl, then add olive oil, salt, and pepper. Using a micro plane or small grater, grate garlic cloves into olive oil. Whisk all ingredients together.
- Add chicken wings and toss to coat thoroughly.
- Coat the cooking rack with cooking spray. Place chicken wings on the rack. Bake in oven for 30 minutes. Turn wings and continue to cook for 15 – 20 minutes until wings are golden brown and done. Turn wings over one last time and broil to get extra crispy skin.
- Zest and juice the second lemon. When the chicken comes out of the oven, drizzle with lemon juice, then sprinkle with zest and 1 teaspoon salt. Let cool, then serve.
