Ingredients:
- 3 large sweet potatoes, peeled and sliced about 1/4″ thick
- 3 large apples, peeled and sliced about 1/4″ thick
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 3 tbsp butter, melted
- 1/4 tsp salt
- Pecan topping
- 1 cup pecans, roughly chopped or whole, more if you like a heavy topping
- 1 tbsp butter, melted
- 2 tbsp brown sugar
Directions:
- Preheat the oven to 375 degrees.
- In a large bowl combine sliced apples, sweet potatoes, maple syrup, cinnamon, salt and melted butter. Toss very well until apples and sweet potatoes are evenly coated
- In a small bowl make the pecan topping. Combine pecans, melted butter and brown sugar. Mix until pecans are thoroughly coated with brown sugar and butter. Note: If you like a heavy topping, use 1.5-2 cups of pecans.
- Add the sliced apple and sweet potato mixture to a lightly oiled large casserole dish. Cover with aluminum foil.
- Bake at 375 for 30-35 minutes until sweet potatoes and apples are tender.
- Uncover, top with pecan and brown sugar mixture topping and bake for an additional 5 minutes.
