This recipe is really a blank slate so feel free to get creative! Sweet potatoes and beans help these burritos fill you up and make a great quick meal for any time of the day. To save time on the day of, puree sweet potatoes (or pumpkin) the night before. Sweet potatoes can be pureed by roasting in the oven at 425 for 45-60 mins then carefully scooping out potato meat and pureeing in a blender or food processor.
Ingredients:
- 1-15 oz can of refried beans
- 1 cup of pureed sweet potato or pureed pumpkin
- 1 TBSP taco seasoning
- ½ to ¾ cup veggies of your choice
- 6 tortillas
- Shredded cheese (Optional)
Directions:
- In a bowl combine beans, sweet potato puree, taco seasoning, and veggies
- Spread ¼ cup to 1/3 cup of mixture onto tortilla, top with 1 TBSP cheese if you’d like. Then roll up burrito
- On medium heat in a dry skillet, heat burritos for 2 mins on each side or until warmed through
- Top with your favorite salsa and enjoy!
