Ingredients:
- 1 cup leftover mashed or pureed butternut squash
- 1/4 cup 0% greek yogurt- plain or flavored (vanilla, etc)
- 1/2 cup milk- dairy or plant milk
- 1 tsp cinnamon
- 1 Tablespoon nut butter (ex: almond or peanut butter; optional)
Directions:
Place all ingredients in a blender and blend until smooth.
Notes:
You can substitute leftover cooked sweet potato, carrots, parsnips or beets in this recipe!
Get adventurous!: Add ½ cup chopped kale or spinach, ½ banana or 2 dates for a greener smoothie.
