This recipe is a great side. Daikons mellow out when roasted into a caramelized, sweet treat. Eat simply with a sprinkle of salt and pepper, or spice it up with a drizzle of honey, a vinegar of your choice, or a combo of the two! You could also top off with paprika or another dash of spice.
Ingredients: 1 large daikon or a bunch of medium daikons (enough to fill a pan) Olive oil for coating Salt and pepper to taste Honey vinegar paprika as you wish! |
Directions: 1. Set oven temperature to 375º. 2. Chop daikon into french fry shapes and place on a single layer on a sheet pan. Don’t overload the pan, just use two pans if you want more fries! If you stuff them all on one sheet, they will steam instead of roast and not get as sweet! (Make them the size you want — remember the bigger they are, the longer they will take to roast in the oven. The smaller you cut them, the less time they need to roast.) 2. Coat with olive oil. And place in over for about 25 mins, stirring halfway through. It may be shorter or longer depending on how big you cut the fries, so check on them after 10 minutes. 3. Enjoy while they’re hot!! |
