Granola Jam Bars

Active Time: 10 minutes / Total time: 35 minutes / Servings: 8–10

Can be made with the chia seed jam from the sauces section!

Ingredients:

  • 1¾ cups all-purpose flour
  • 1¾ cups rolled oats
  • 1 cup walnuts
  • 1 cup sugar
  • 1 tsp baking soda
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ¾ cup melted coconut oil
  • 1¼ cups jam or preserves, any flavor you like!

Directions:

  1. Preheat the oven to 350°F.
  2. Spray a 9 by 13 baking dish with cooking spray. Line the bottom with parchment paper. Spray the parchment paper with cooking spray and set aside.
  3. Whisk flour, oats, walnuts, sugar, nutmeg, salt, and soda in a large bowl.
  4. Pour in the oil and stir until mixture is coated with all the oil.
  5. Press ¾ cup oat mixture onto the bottom of the pan.
  6. Spread the jam evenly over the crust.
  7. Sprinkle the remaining crust on top.
  8. Bake for 25 to 30 minutes, until the crust is golden brown.
  9. Let cool completely before cutting.
  10. Store in an airtight container in the refrigerator for up to 2 weeks.
