Can be made with the chia seed jam from the sauces section!
Ingredients:
- 1¾ cups all-purpose flour
- 1¾ cups rolled oats
- 1 cup walnuts
- 1 cup sugar
- 1 tsp baking soda
- ½ tsp ground nutmeg
- ½ tsp salt
- ¾ cup melted coconut oil
- 1¼ cups jam or preserves, any flavor you like!
Directions:
- Preheat the oven to 350°F.
- Spray a 9 by 13 baking dish with cooking spray. Line the bottom with parchment paper. Spray the parchment paper with cooking spray and set aside.
- Whisk flour, oats, walnuts, sugar, nutmeg, salt, and soda in a large bowl.
- Pour in the oil and stir until mixture is coated with all the oil.
- Press ¾ cup oat mixture onto the bottom of the pan.
- Spread the jam evenly over the crust.
- Sprinkle the remaining crust on top.
- Bake for 25 to 30 minutes, until the crust is golden brown.
- Let cool completely before cutting.
- Store in an airtight container in the refrigerator for up to 2 weeks.
