Fennel and Apple Salad

Serves: 3-4 Total Time: 20 min

This is an extremely easy and delicious recipe. I like to use a tart variety of apples such as the Granny Smith or Gravenstein. If you like a sweeter tasting apple for salads, I recommend Fuji, Golden Delicious, Braeburn or Jonagold.

Ingredients:

  • 4 medium-sized apples
  • 3 small heads of fennel, cut into matchsticks
  • 3 TBS fresh lemon juice
  • 3 TBS red onion, very thinly sliced
  • ¼ C olive oil
  • ½ tsp sea salt
  • Pinch of black pepper
  • 2-3 TBS fresh Italian parsley, chopped

Directions:

  1. Place lemon juice in a large bowl. Julienne (cut into matchsticks) all apples and toss with the lemon juice one at a time to keep them from browning.
  2. Add fennel, red onion, olive oil, sea salt, pepper and Italian parsley. Toss until well incorporated.

Note: Best served after sitting at room temperature for 20-30 minutes.
