Lemon & Garlic Baked Chicken Wings

Total Time: 55 minutes Serves: 4

Recipe adapted from: A Southern Soul

Ingredients:

  • 2 packages chicken wings
  • 2 lemons 
  • 2 tbsp olive oil 
  • 4 cloves garlic – peeled
  • 3 teaspoons salt
  • 1 teaspoon pepper

Directions:

  1. Heat oven. Line a baking sheet with foil and place a wire rack on top. Set aside. 
  2. Zest and juice one lemon into a large bowl, then add olive oil, salt, and pepper. Use a small grater to grate garlic cloves into olive oil (mince garlic if you do not have a grater). Whisk all ingredients together.
  3. Add chicken wings and toss to coat thoroughly. 
  4. Coat the cooking rack with cooking spray. Place chicken wings on the rack. Bake in the oven for 30 minutes. Turn wings and cook for 15 – 20 minutes until golden brown and done.
  5. Turn wings over one last time and broil to get extra crispy skin.
  6. Zest and juice the second lemon. When the chicken comes out of the oven, drizzle with lemon juice, then sprinkle with zest and salt. Let cool, then serve.
