Ingredients:
- 8 ounces (or one package) reduced-fat Cream Cheese
- 14 ounces (1 can) fat-free sweetened Condensed Milk
- 1 tablespoon grated Lime zest
- ½ cup Lime juice
- 2 large Egg yolks
- ¼ cup minced fresh Basil
- 1 eight-inch reduced-fat Graham cracker pie crust
- (Optional) Sweetened Whip cream or creme fraiche
Preparation:
- Preheat oven to 325 degrees. In a large mixing bowl, beat the cream cheese to a smooth consistency.
- Then, slowly mix in the condensed milk. Add the lime zest, juice, and egg yolks next. Mix until blended together well, then stir in the Basil.
- Pour the mixture into the crust and bake for 15-18 minutes, or until the center is set. Cool the pie for 1 hour on a rack. Place in the refrigerator and cool for at least 2 more hours. Serve and enjoy.
