Quick Key Lime Basil Pie

Recipe by: Taste of Time

Ingredients:

  • 8 ounces (or one package) reduced-fat Cream Cheese
  • 14 ounces (1 can) fat-free sweetened Condensed Milk
  • 1 tablespoon grated Lime zest
  • ½ cup Lime juice
  • 2 large Egg yolks
  • ¼ cup minced fresh Basil
  • 1 eight-inch reduced-fat Graham cracker pie crust
  • (Optional) Sweetened Whip cream or creme fraiche

Preparation:

  1. Preheat oven to 325 degrees. In a large mixing bowl, beat the cream cheese to a smooth consistency.
  2. Then, slowly mix in the condensed milk. Add the lime zest, juice, and egg yolks next. Mix until blended together well, then stir in the Basil.
  3. Pour the mixture into the crust and bake for 15-18 minutes, or until the center is set. Cool the pie for 1 hour on a rack. Place in the refrigerator and cool for at least 2 more hours. Serve and enjoy.
